In 1982, I developed my very first spice blend, Retour des Indes, as a way to allow my cuisine to express both the maritime history of Saint-Malo and my childhood dreams of travel and adventure.
It defines my signature dish, “John Dory Retour des Indes.” The blend draws on the flavors of spices that were present within the walls of Saint-Malo at the time of The French East India Company” to deliver an explosive bouquet of ‘faraway’ flavors.
