Beena Paradin and I teamed up to create a line of traditional Indian spiced blends. Beena, who dearly loves her native Kerala, shared her family secrets with us. Then, we worked together in Cancale to perfect the spices blends’ composition, and the roasting and grinding processes used to produce the final product.
Story
Masala literally means "blend", and the word can be used to describe any combination of Indian spices. In southern India, "masala" is the term used to describe a specific, coriander-based blend like this one. It is the quintessential Indian spice blend.
