This blend is an homage to the Acadian cooks who reinvented their cuisine in Louisiana at the end of the 18th century. The blend is now an integral component Cajun cuisine in Louisiana which has Creole influences.
The combination of chiles, peppers, garlic, and dried herbs is easy to use in marinades, grilled meat dishes, and slow-cooked stews. Salt and pepper can be omitted from a recipe when our Cajun Spice Blend is used.
