Botanique Powder-Summer plays off the flavors of grilled vegetables, salad vinaigrettes, gazpachos, vegetable gratins, fresh cheeses (sheepsmilk, mozzarella, feta - with a drizzle of olive oil) as well as fish. No need to add pepper to your dishes; black pepper is already an integral part of the spice blend.
Should you want to take things to the next level, add pan-toasted almonds and hazelnuts to the spice blend and crush everything together before sprinkling the mixture over your dishes. (Combine 1 teaspoon of Botanique Powder with 1 teaspoon each of toasted almonds and hazelnuts.)
Botanique Powder can also be added to the pan juices of cooked fish and meat or stirred into breadcrumb toppings. But perhaps the easiest way of all to enjoy Botanique Powder is to serve it with bread and olive oil as an hors d’oeuvre.

This spice blend combines sesame, coriander, and Egyptian cumin seeds with roasted hemp seeds from Brittany.
As a little girl, I was fortunate enough to be able to enjoy all the dishes at Le Bricourt, my parents’ restaurant. The small, day-boat soles (solettes) sautéed in butter was always my favorite. It wasn’t until much later that I discovered that what made the dish so special: roasted spices—sesame, coriander, cumin, and pepper—along with almonds and hazelnuts that were slipped into the pan sauce. That mixture took its inspiration from Dukkha or Dukka, a traditional Egyptian spice blend.
Our Botanique Powder for Summer 2020 is an homage to this fabulous spice blend steeped in Egyptian culture and my first summer memories.
