Green Peppercorns can be used in place of other peppers for a lighter, fresher flavor with less heat. I like to add a few grinds to fruit salads--especially those made with berries. I also enjoy it in homemade mayonnaise and in "poivre" vert" sauces.
Story
In his Parisian spice shop, Paul Corcellet enjoys introducing his customers to the intensely fresh flavor of green peppercorns, which are harvested before they ripen, then freeze-dried. He's a man who's interested in everything—and has traveled the world!
