Olivier Rœllinger's words
Phu Quoc Red ripe peppercorns are harvested when they are ripe and have developed floral, mango-scented aromas with a hint of sweetness and brine.
This exceptional pepper, with its salty-sweet mango scent, is a favorite of mine for fruit salads and berry coulis.

Story
Phu Quoc Island, which is also known for its superior quality fish sauce, has been producing pepper since the 19th century.
Growers still use traditional production methods to pick the bright red, fully ripe peppercorns one by one. These are then dried in the shade to develop and preserve all their wonderful aromatic qualities.
After that, they are rinsed in mountain spring water and dried and sorted once more.
Growers still use traditional production methods, and we work directly with a family from the island who have a 12-acre farm.
