The words of Mathilde Rœllinger
Narayakkodi Indian Black Pepper is a great delicacy. Once ground, it reveals subtle floral fragrances which evoke honeysuckle and blackcurrant leaves. The other notes give a fresh, spicy tang.
I enjoy this rare pepper with all vegetables, raw or cooked. This is the latest pepper variety that the small-scale pepper producers in Kerala invited us to taste. We have only received a few dozen kilos for this first harvest: supplies are, therefore, limited.
For about 15 years now, 17 Kerala farmers have agreed to pick, select, and hand-sort the different peppers according to their botanical variety, not simply according to their size. This was a quite a big risk to take because we upturned how things were traditionally done.
