Olivier Rœllinger's words
This boasts extraordinarily elegant, sophisticated flavor notes that linger on the palate. It is like a fragrant flower bouquet that smells of early summer and deliciously enhances fish dishes.
Story
The elderflowers that explode into bloom along the custom’s path and the cliffs around Cancale are the first signs that summer has arrived in Brittany. Elderflowers and elderberries were once a well-known folk remedy in the French countryside. Both hold a special place in European folklore. The flowers’ scent is a combination of rosewater, late-harvest grapes, and lichis.
Elderflowers must be gathered quickly on a warm afternoon before they wilt. We grow the blossoms in our very own gardens in Cancale. Then, we capture their fragrance in neutral-flavored grapeseed oil.
