Story
Claire was a shepherdess in Provence before becoming a saffron enthusiast. Since 2018 she has been growing saffron in a small village in the Alps, 900m in altitude. Claire looks after the 30,000 saffron flowers which she grows organically in this stunning setting, tucked away in the hills.
The flowers are harvested between October and November. Claire picks the flowers just before they open at daybreak. In the afternoon, the flowers are immediately pruned to extract the stigmas, which are then carefully dried.
